Tasting Trio- Tomato Mint Salad


Grape or cherry tomatoes


Vinaigrette dressing with fresh mint


Partially peel the cucumber leaving some of the skin so it looks like stripes, then cut it into small bite size pieces.

Cut tomatoes in half.

Place both ingredients in a medium size bowl and add the mint vinaigrette dressing.

Toss well and serve


Mint Vinaigrette Dressing

 1/3 Cup white wine vinegar

2 Tablespoons light olive oil

1 Tablespoon sugar

1 1/2 teaspoons salt

3 teaspoons chopped fresh mint leaves
