Harvest of the Month- February Recipe

Carrot Salad
Ingredients:
  • 3 cups shredded carrots
  • 1 cup crushed pineapple (drained)
  • 1/2 cup raisins
Dressing:
  • 1/4 cup tablespoon light mayonnaise
  • 1/4 cup tablespoon light vanilla yogurt
  • 2 tablespoons pineapple juice
  • 1/8 teaspoon salt
Recipe:
  1. Drain the crushed pineapple reserving 2 tablespoons of the juice for the dressing.
  2. Place carrots and raisins in a large bowl, add the pineapple.
  3. Stir together the pineapple juice, mayonnaise, yogurt, and salt for the dressing.
  4. Add to carrot mixture.
  5. Mix well.
  6. Chill and Serve
