Carrot Salad
Ingredients:
- 3 cups shredded carrots
- 1 cup crushed pineapple (drained)
- 1/2 cup raisins
Dressing:
- 1/4 cup tablespoon light mayonnaise
- 1/4 cup tablespoon light vanilla yogurt
- 2 tablespoons pineapple juice
- 1/8 teaspoon salt
Recipe:
- Drain the crushed pineapple reserving 2 tablespoons of the juice for the dressing.
- Place carrots and raisins in a large bowl, add the pineapple.
- Stir together the pineapple juice, mayonnaise, yogurt, and salt for the dressing.
- Add to carrot mixture.
- Mix well.
- Chill and Serve
