Harvest of the Month- April Recipe


Spinach Salad

 

Ingredients

o  1 large package baby spinach

o  ½ cup of chopped pecans

o  ½ cup of dried cranberries

 

Dressing:

o  2 tablespoons canola oil

o  2 tablespoons honey

o  ½ teaspoon salt

o  ¼ cup white wine vinegar

o  ¼ cup apple juice

o  ½ teaspoon yellow mustard

o  1 crushed clove of garlic

 

In a large bowl combine spinach with dressing toss well.  Add pecans and cranberries.  Toss again, serve immediately.
